Maple-Mustard Sausages

For a time, when I was living in London, I helped out a friend by taking a few shifts in her lovely, cornflower blue food shop in South Kensington. In addition to her successful catering business, she ran a lovely food shop which was popular with the locals. The window was filled with platters of enticing food which would be measured out to take home for eating. One of her specialities, which truly had locals calling the shop to check if we still had some left, was the honey-mustard sausages! Not only did they look lovely but they tasted great, warm or cold.

Now that I am juggling school runs, activities and all the other joys of having a family, I find I need to have a few things up my sleeves which can be prepared in advance and pulled out for eating on the go or in a hurry! Following from my friend’s lead I have made these but switched to maple syrup instead. These are perfect. They make an ordinary sausage taste amazing, be it hot or cold.

If you are making these for little ones, try to buy good quality sausages, gently pinch in the middle of each sausage and then twist them around to make them half the size. Snip them apart and then cook.  Really easy to do and it makes the kids like them so much better for some reason!

Maple-Mustard-Sausages

  • 1 package of good quality sausages (~6-8 regular sized sausages)
  • 1 Tbsp Olive Oil
  • 1 Tbsp Grainy Mustard (or most French mustards work)
  • 2 Tbsp Maple Syrup

Oven 180C

Prepare your baking tray with parchment and snip your sausages so they are all separated and arrange on the tray. Mix together the olive oil, mustard and maple syrup. Pour the mixture over the sausages, trying to get a good coverage over each one. Place in preheated oven for 40 minutes, removing a couple of times to turn the sausages.

Serve warm, or store them in an airtight container in the fridge for up to 3 days.
