Raspberries are one of my favourite fruits and this smoothie captures their sweetness beautifully. I have complimented it with ripe peaches and Lucuma powder.
Lucuma powder has a light nutty, caramel sweetness to it – similar to custard. It comes from a fruit which has a texture like that of a hard-boiled egg. The powder is derived from the dried fruit which is then ground. This superfood has a low GI and offers up beta-carotene, iron, zinc, vitamin B3, Calcium and protein.
- 250ml (1 cup) Almond Milk
- 1/2 cup Frozen Raspberries
- 1 Peach (you could also use nectarines instead!)
- 1 Banana
- 1 tsp Chia Seeds
- 1 tsp Lucuma Powder
Cut the peach in half and remove the stone. Then add all the fruit, milk, Lucuma and chia seeds to the blender. Mix until smooth.
As with all smoothies, the texture can be quite personal. If you prefer a thicker texture then you can add ice or freeze your banana beforehand. For less thick you can use fresh berries or more almond milk.And finally, if you need more bulk to stave off your hunger in the morning then increase the chia seeds to 1 Tbsp or consider adding some oats instead!
