If I could have a cooked breakfast everyday, I think I would be most happy. Okay, lets be realistic, a breakfast of pastries and sweets would best – but not realistic. When the weather is cooler and the threat of snow is in the air, a warm cosy breakfast is the best way to start the day.
We keep a large supply of frozen fruit in the freezer for our smoothies (and for my baking, of course!), so we usually have a stash of mixed berries amongst them. I don’t have a lot of time in the morning so I need something I can pull together in a few minutes, but which makes me feel satisfied enough to keep me going until lunch time.
This is a really easy and satisfying alternative to your basic oatmeal. For a cold winter morning it is a great start to your day. It doesn’t take long to prepare and you can usually be eating it in 15 minutes.
- 2/3 cup Rolled Oats
- 2/3 cup Boiling Water
- 1/3 cup Coconut Milk (or other milk/alternative)
- 2/3 cup Frozen Mixed Berries
- 1 Tbsp Maple Syrup
For this you will need two saucepans, one for the oatmeal and the other for the berries. In the first, measure out the oats and add the boiling water. Give it a stir and set it aside with the lid on – for roughly 10 minutes. Meanwhile, in the other saucepan, add the frozen mixed berries along with the maple syrup and place over med-low heat, stirring occasionally. As the berries defrost they will release their juices which will mix with the maple syrup to create a lovely sauce.
Go back to the other saucepan, remove the lid and give it a stir. Slowly add the coconut milk whilst stirring over medium heat and finish cooking the oats – another 5 minutes. By this time the berries should be done. Serve the oats in a bowl topped with the berries and the syrupy liquid.
